how to make Avocado Dip at home
Looking for a healthy evening snack? Then look no further. This avocado dip topped with roasted corn salad is brilliant and makes for a welcome change from guacamole. Eat it with tortilla chips, crackers or just spread it on any toast!
Method
1. Roast 1 cup corn until well charred
2. In a bowl mix together the corn. Add 2 tbsp lemon juice, 2 chopped green chillies, 1 tsp smoked paprika, 1 tsp red chilli powder, 1 tsp cumin powder and salt to taste
3. Mix in 1 diced onion, spring onions and mix well. Set aside the corn salsa
4. Take two avocados and mash them. Add lemon juice and salt to it
5. Layer the mashed avocado in a bowl
6. Add 3-4 tbsp of the roasted corn salad
7. Garnish with fresh jalapeños, feta cheese and spring onions

BRAISED BLACK BEAN TOFU WITH MUSHROOMS
Method:
1. Heat 1 tsp sesame oil
2. Add 1 bowl of extra firm tofu - cut cubes
3. Pan cook till tofu is golden brown and set aside
4. In a pan, add 1 tsp sesame oil and sauté 1 diced onion
5. Add 1 tbsp minced garlic
6. Add 1 bowl of chopped mushrooms
7. Add 2-3 bird eye chillies
8. Add 1/4 cup spring onions
9. Sauté until mushrooms are cooked
10. Add 1/2 to 3/4 cup of the black bean sauce from WholeSpoon x Bowledoverbykari @wholespoon.in
11. Add 1/2 cup water and stir together
12. Add in the pan cooked tofu and mix well
13. Garnish with spring onions and sesame seeds.
14. Dig in!

how to make thai tofu satay with peanut sauce at home
1. 350gms of tofu
2. 1/2 cup coconut milk
3. 1 tbsp red thai curry paste
4. 1 tbsp maple syrup
5. 1 tbsp soy sauce
6. 1/2 tsp garlic minced
7. Salt to taste
Method:
1. Cut the paneer into strips
2. In a bowl mix together the coconut milk, maple syrup, red thai curry paste, soy sauce, garlic and salt
3. Marinade the tofu in it for 1 hour
4. heat a little oil on a girdled pan. Cook the tofu on each side for 7-8 minutes until golden brown.
5. Serve hot with peanut sauce
Recipe for the peanut sauce:
1. 2 tbsp peanut butter
2. 1 tbsp soya sauce
3. 1 tsp rice wine vinegar
4. 1 - 2 bird eye chili
5. 2 tbsp lemon juice
6. 1 tbsp of fresh ginger, peeled
7. 1 clove of fresh garlic, peeled
8. 1 tbsp maple syrup
9. Salt to taste
You could add a little water to thin down the dressing. Blend all the dressing ingredients together until smooth and creamy.

Ingredients:
1. 1 block firm tofu
2. 1 tsp toasted sesame oil
3. 1/3 cup water
4. 2 tbsp soy sauce
5. 2 tbsp minced spring onion
6. 1 tbsp gochujang
7. 1 ½ tsp gochugaru
8. 1 tsp minced garlic
9. salt to taste
10. 2 tsp toasted sesame seeds
11. Sliced spring onion for garnish
Method
1. Cut the tofu into (¼ inch) thick rectangles
2. In a pan add the oil
3. Add the tofu and fry for 2-3 minutes, until lightly browned. Turn the tofu pieces over and cook for another 2-3 minutes until the other side is golden brown.
4. mix the water, soy sauce, spring onion, gochujang, gochugaru, garlic, and salt in a small bowl. Add this to the pan with the tofu. Turn the heat down to medium-low. Simmer and add the sauce over the tofu from time to time, until most of the liquid has been absorbed
5. Add tofu to a plate and sprinkle with toasted sesame seeds and spring onion. Serve hot......
