This video has been a long time coming and I finally feel ready to share my body transformation story of essentially going from binge eating/drinking, to a 1,500 calorie-restrictive SAD diet, to an abundantly colorful 3,000+ calorie WFPB diet! To sum it up...
Changes I went through:
1) Overweight on the SAD (Standard American Diet)
2) "Skinny Fat" w/ high cholesterol on a "healthy" diet of 1,500 calories a day eating Lean Cuisine, Fiber One everything, and cold cut subs
3) Underweight on 1,500 calories a day on a whole foods plant-based diet (you can see not all calories are created equal)
4) Healthy, Happy, & Fit on 3,000+ calories a day as a vegan breastfeeding mom & plant-powered athlete

Breakfast Sandwiches
356 calories
29g protein / 44g carbs / 8g fat
Ingredients
1 English muffin
1 block super firm tofu
1 tsp kala namak (black salt) can sub nutritional yeast
1 tsp turmeric
1 tbsp soy sauce
Black pepper
To make the tofu egg, slice your tofu into 1/4 inch blocks and press out a circle with a cup. Mix together your salt, turmeric, soy sauce and black pepper to form a paste and brush it over the tofu.
Breakfast sausages
1/2 cup TVP
1/2 cup hot water
1/2 cup chickpea flour
1/4 cup instant oats
1 tbsp ground flax seeds
1 tbsp nutritional yeast
1 tsp garlic powder
1/4 tsp fennel
1/2 tsp paprika
1/2 tsp liquid smoke
3 tbsp soy sauce
2 tbsp maple syrup (optional)
In a bowl combine your hot water and tvp. Mix in soy sauce, liquid smoke, maple syrup. Next add in your spices and mix well. Add in your oats, flax and chickpea flour.
Form into balls and press flat like a patty. Place on a pan with parchment paper and either air fry on 370 degrees for 15 minutes or cook in the oven on 400 for 15-20 minutes.
Once your sausages are done you can assemble the sandwich. Put your tofu on the bottom, the sausage and then to the top bun you can either add cheese or avocado. Place back in oven or air fryer for a few minutes until crispy.
Protein Banana Bread
1 slice = 215 calories
13g protein / 35g carbs / 4g fat
Ingredients
2 tbsp flax seed + 5 tbsp of water to make a flax egg
1/2 cup soy milk
1 cup oats
2 ounces of protein powder *
2 super ripe bananas (mashed well)
1/2 cup blueberries
1.5 tsp baking powder
1/2 tsp baking soda
1 cup chickpea flour
*If your protein powder is not sweetened you will want to add in 1/4 cup of sweetener.
In a bowl combine your chickpea flour, oats, protein powder, baking soda and powder and mix well. Next add in your flax egg, mashed banana, and soy milk. This mixture will be pretty thick but this bread is very dense so thats how we want it. Slowly mix in your blueberries and pour into a nonstick bread pan. Place a few extra blueberries on top with any other toppings you choose (i.e., almonds, coconut flakes, hemp seeds) Bake on 400 degrees for 30 minutes. Check with a toothpick and if it does not come out dry. Place it in another 5-10 minutes.
You can also cook this in an air fryer for 30 minutes on 370 degrees again checking with a toothpick until it comes out clear. This recipe can be made into muffins or pancakes as well!
Tempeh Bacon Wraps
398 calories
20g protein / 44g carbs /16g fat
1 tortilla (I use Ezekiel brand)
1 ounce of vegan feta (can sub hummus/avocado)
1 package of light life tempeh
2 tbsp soy sauce
1 tsp liquid smoke
2 tbsp maple syrup
1 tsp garlic powder
+ any veggies you like (I used broccoli, mushrooms, bell peppers and onions)
Mix together your soy sauce, garlic powder, maple syrup and liquid smoke. Slice your tempeh very thin and place in mixture. Let marinate at least 30 minutes (overnight is best)
Place your tempeh on a nonstick pan lined with parchment paper and bake at 400 degrees for 15 minutes until crispy. In a sauce pan add a little bit of water or soy sauce over medium heat and add in your vegetables. Cover and let cook until soft (about 8 minutes)
Place your feta, veggies and tempeh in your tortilla and wrap up like a burrito.

RECIPES -
Days 1-3
Berries & Coconut Oatmeal (3 servings)
3 cups oats
3 cups berries
3 tbsp coconut
3 cups plant milk
Put all of your ingredients into jar and fill with plant milk.
When ready to eat microwave for 2 minutes with lid off.
Zucchini noodles salad (3 servings)
1 package of tofu pressed and chopped
1 zucchini julienned
1 cucumber
1 carrot julienned
1/4 cup cilantro
1 green onion chopped
Dressing
1/2 cup almond butter (can sub peanut)
1 tbsp apple cider vinegar
3 tbsp low sodium Tamari or coconut aminos
3 tbsp maple syrup
Juice 1 lime
1 tsp garlic powder
1 tsp ginger powder
1 tbsp sesame seeds
1/4 cup water
Put all dressing ingredients into a bowl and add water slowly to get the consistency you want. Whisk together.
Rice and potato curry (3 servings)
3 cups cooked rice white or brown
4 red potatoes diced
1 cup red lentils
1 cup coconut milk
1.5 cups water
1 carrot chopped
1 tbsp curry powder
1 tsp garlic powder
Place everything in a saucepan on your stove bring to a boil, cover and reduce heat to a simmer. In the instant pot place everything in your pot and cook for 15 minutes natural release.
Days 4&5
Chocolate Strawberry Smoothies ( 2 servings)
6 frozen bananas
4 tbsp raw cashews
2 tbsp cacao powder
2 cups strawberries
Break bananas into chunks and place 3 each in a 32oz mason jar, add the rest of your ingredients and freeze. When ready to eat fill jar with water and pour into blender. Blend on high until smooth and creamy.
Waldorf salad (2 servings)
6 cups mixed greens
1 Apple chopped
4 tbsp walnuts
1 stalk celery chopped
1/4 onion chopped
Dressing
1/4 cup tahini
2 tbsp balsamic vinegar
2 tbsp maple syrup
1/4 cup water (add as needed)
Place all dressing ingredients in a bowl and whisk together, slowly add water as needed.
Sushi bowls (2 servings)
4 cups cooked rice
2 tbsp coconut aminos
1 avocado
1 carrot julienned
1 cucumber julienned
2 nori sheets cut up
2 tbsp sesame seeds

Cook fries in air fryer or oven on 350 degrees for 20 minutes or until crispy

GF Choc Granola:
- 2 cups quinoa flakes
- 1 cup cashews
- 2/3 cup sunflower seeds
- 1 tbsp pumpkin seeds
- 1/4 cup sesame seeds
- 1/4 cup chia seeds
- 1/2 cup almond meal
- 3 tbsp cacao powder
- 1 tbsp maca powder
- 3 tbsp maple syrup
- 3/4 cup peanut butter
- 3 tbsp coconut oil
Baked at 180 degrees celcius for 20 minutes, turning once
Creamy sundried tomato pasta sauce (serves 3-4):
- 3/4 cup cashews, soaked for 1 hour
- 15 sundried tomato halves
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 cup nutritional yeast
- juice of 1/2 a lemon
- 1 clove of garlic
- 1 + 1/4 cups water
Blended in Vitamix until smooth
Nachos (Serves 2):
Nachos served with corn chips, charred corn, store-bought salsa and spring onions
Cashew Cheese Sauce:
- 1 cup cashews, soaked for 1 hour
- 1 cup water
- juice of 1/2 a lemon
- 1 garlic clove
- 1 tsp onion powder
- 1/4 tsp salt
- 1/2 cup nutritional yeast
Blended in Vitamix until smooth
Guacamole:
- 1 avocado
- juice of 1/2 a lemon
- 1/2 tsp salt
Mashed until desired consistency
Smokey Black Beans:
- 1 can black beans, rinsed
- 1/2 tsp salt
- 1 tsp onion powder
- 2 tsp smoked paprika
- 3 tsp liquid smoke
- 1 tbsp olive oil
Fried for 5-10 minutes
Cauliflower & Butter Bean Curry (serves 2-3):
- 1 head cauliflower, cut into florets
- 2 sprigs spring onion, chopped finely
- 1 tsp coconut oil
- 1/2 cup water
- 1 tbsp vegeta (veggie stock)
- 1/2 tbsp yellow curry powder
- 400ml coconut cream
- 1 tbsp tomato paste
- 1 tsp salt
- 1 can butter beans, drained
- large handful of spinach
Fry spring onion in large saucepan in coconut oil. Add all ingredients (except spinach) in large saucepan and cook for 20 minutes. Add spinach at the end and cook for a further 5 mins. Serve with rice and coconut yoghurt.
Smokey Black Bean Chilli (serves 2):
- 1 sprig spring onion, chopped finely
- 3 cloves of garlic
- 1 tsp olive oil
- 1/2 tsp chilli flakes
- 3 tsp liquid smoke
- 1 can black beans, washed
- 1 cup passata
- 1 tsp salt
- 1/2 tsp cumin
Cook all ingredients over medium heat in a large saucepan for 10-15 minutes. Serve with rice and fresh coriander.
Pancakes (makes 6-7 pancakes):
- 1 cup buckwheat flour
- 1/3 cup almond meal
- 1 cup soy milk
- 1 tbsp apple cider vinegar
- 1/2 tsp vanilla
- pinch of salt
- 1/4 cup maple
- 1/2 tsp baking soda
Blend well in a vitamix, add choc-chips if desired.
Cookies (makes 8-12 cookies, dependent on size):
- 1/2 cup vegan butter
- 1 tsp vanilla
- 3/4 cup brown sugar
- 1/2 tbsp flaxmeal + 3 tbsp water (1 flax egg)
- 1 cup buckwheat flour
- 1/4 cup almond meal
- 1/2 cup cocoa powder
- 1 tsp baking soda
- pinch of salt
- 70g vegan white chocolate
Mix butter, vanilla, sugar and flax egg together until well combined. Add buckwheat flour, almond meal, cocoa powder, baking soda and salt and mix well. Add white chocolate and mix lightly. Roll into balls and bake on a lined baking tray for 20 mins at 190 degrees celcius.
Herby Avo Smash (serves 2):
- 1 avocado
- juice of 1/2 a lemon
- pinch of pink salt
- 1/2 cup peas
- 1 tsp dill
- small handful of parsley
- 1/2 tsp garlic powder
- 1/2 tsp onion powder

Mix together quinoa, seasoning and coconut aminos.
Add avocado, lemon, coconut aminos and garlic powder and mash into the salad. Place quinoa mix on the side and top with veggies.

2. mix sesame oil, soy sauce, tomato sauce, maple syrup and orange juice together, pour over cauliflower, sprinkle with sesame seeds and place back in the oven for a further 20 mins
3. serve with rice or greens :)
banana rasp white choc muffins:
- 2 cups self-raising flour
- 1/2 cup oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- 1/4 cup almond butter, cashew butter or macadamia butter (can sub. for vegan butter)
- 2 ripe bananas
- 1/2 cup frozen raspberries
- 1/3 cup maple syrup
- 80g vegan white choc (I used Loving Earth)
- 1 tsp vanilla extract
- 1 cup oat milk
- 1 flax egg (1 tbsp flax meal mixed with 3 tbsp water and set to the side)
1. preheat oven to 190 degrees celsius & grease a 6-muffin tin
2. mix all dry ingredients together. form a well in the centre, add all wet ingredients and mix well. at the end, add white choc and raspberry and mix lightly.
3. spoon mixture evenly into the muffin tins and bake in the oven for 35 minutes
creamy pasta sauce:
- 2 + 1/2 cups roasted pumpkin (skin off + cooled down!)
- 2/3 cup cashews, soaked in boiling water for 1 hour
- 1/3 cup nutritional yeast
- pinch of turmeric
- 2 tsp veggie stock powder
- 2 tsp garlic powder
- 1/2 tsp salt
- pinch of black pepper
- juice of 1 lemon
- 1 cup water
1. blend together until smooth
2. heat in a saucepan with cooked pasta, serve hot with crispy kale if desired
chickpea scramble:
- 1 cup chickpeas, drained and rinsed
- a splash of soy milk
- 1 tbsp nutritional yeast
- a pinch of salt
- a pinch of pepper
- 1/2 tbsp of herbs (whichever are desired)
1. mash chickpeas with your hands in a bowl. add milk, nooch, salt, pepper and herbs and continue to mash until they have a 'scrambled' texture
2. place a little bit of oil in a pan, add the scramble mixture and fry on medium-high heat for 3-5 minutes. serve hot on toast and enjoy :)
peanut butter stir fry sauce:
(serves two)
- 1/3 cup peanut butter
- 1/2 tbsp soy sauce
- 1 tsp maple syrup
- 1 tbsp lemon juice
- 1/4 cup water
1. mix all ingredients together until smooth
2. pour over stir-fry and mix through over the heat
