In the late 80s early 90s, The name Run TMC sparked fear in opponents trying to defend the Golden State Warriors on the fast break. Tim Hardaway, Mitch Richmond & Chris Mullin were known to give opponents problems anytime they stepped on the court. Hardaway was the captain who led the ship. Hardaway was a 5x time all-star with a good outside shot and can always break down any defense. How good was Tim Hardaway? He reached 5,000 pts and 2,500 assists faster than any player except for Oscar Robertson. He would move on to the Miami Heat where he would continue his stellar play. How good was Tim Hardaway? He would retire with a gold medal from the Sydney Olympics with 5 NBA All-Star game appearances. Not many players can say that about their careers. For some reason, fans have not heard too much from this NBA great. Do most fans want to know why he's not in the Hall-Of-Fame? CHICKEN HAMONADO RECIPE l WHOLE CHICKEN HAMONADO WITH PINEAPPLE JUICE l HOW TO COOK CHICKEN HAMONADO
Ingredients :
1 whole chicken (4 lbs )
1 - 1 ½ cup pineapple juice
¼ cup pineapple chunks (optional)
1 head of garlic, crushed
½ cup sugar
¼ cup soy sauce
1 tablespoon salt
¼ teaspoon ground pepper
2-3 pcs bay (laurel) leaves
2 tablespoons oyster sauce
1 tablespoon cornstarch
¼ cup of water
2 tablespoon oil for basting (or melted butter)
twine for trussing
Directions :
Marinating the Chicken:
(1) Combine the following ingredients:
a. pineapple juice
b. sugar
c. soy sauce
d. 3-4 cloves garlic
e. ground pepper
f. salt
g. oyster sauce
(2) Mix
(3) Add the chicken.
(4) Rub the mixture all over it.
(5) Put everything inside the sealed plastic bag. If possible, keep all sides soaked in the mixture (turn) every 2 hours.
(6) Let it stay overnight or at least 6 hours.
Marinating is up:
(1) Take the chicken out from the plastic bag.
(2) Fill the inside with garlic and bay leaves. (you may use as well the garlic used in the mixture).
(3) Tie the chicken snugly (trussing) with the kitchen twine to make sure the legs and wings stay close to the body. Trussing helps to cook the chicken evenly.
(4) TIMER : Pre-heat the oven to 350 degrees F ( 180 degrees C)
(5) Set the chicken in the roasting rack
(6) Transfer the leftover marinade in the bowl. Divide it into 2. One for basting. One for the gravy mixture later.
(7) BASTING MIXTURE: Add a little bit of oil (or melted butter if you wish). Set aside for basting later.
(8) Once the oven temperature is set, cook the chicken for 30 minutes
(9) After 30 minutes, start basting. (To make sure the chicken is succulent and full of flavor)
*** Using your basting brush, make sure the marinade is spread evenly.
(10) Cook for another 15 minutes, then baste the chicken again.
(11) This time, turn the chicken on the other side and baste.
As a rule of thumb, you should baste at least 3 times (every 15-20 minutes) during the whole process.
(12) Cook for another 30-40 minutes (@350 degrees).
(13) Then, increase the temperature to 375 degrees.
(14) Cook each side for 10 - 15 minutes. The chicken must be cooked by this time.
(15) Glazed it with honey before serving.
(16) Yummy-licious Honey Glazed Chicken Hamonado is now ready to be served !
Note: The most reliable way of checking if the chicken is ready is to use the thermometer to measure the internal temperature. Should be at 165 degrees F minimum.
