When I did my last cooking video, comparing the impact of room temperature eggs vs straight from the fridge, I made a chaffle with Ricotta cheese. Upon tasting it, the first thought in my head was "lemon poppy seed chaffle". In this video, that thought becomes reality.

Cauliflower Hummus - Ridiculously Smooth and Creamy - 3g net carbs per 1/4 cup
I really love hummus, and I'm pretty fond of cauliflower too, so I decided to see what would happen if I tried making hummus out of cauliflower. The result was the smoothest, creamiest dairy free dip I've ever had. This stuff is so light that it's almost fluffy. And it only has 3g of net carbs per 1/4 cup serving.

Ketovore Pancake - No Almond Flour or Coconut Flour - 1g net carbs each!
Since January is "World Carnivore Month", I thought I'd whip up a little something for my carnivore and ketovore brothers and sisters. Though not "pure" carnivore, these are awfully close if you're looking to give yourself a treat.
I got a version of this recipe from one of my viewers, Donna Gorman-Newell. I made some tweaks on the ingredients and the cooking method and came up with a pancake that my non-keto wife and daughter thought was a real pancake.
Also, when you see me using the IR thermometer on my griddle, I'm showing that mine runs hot and that it's good to verify the thermostat on any cooking product. I subsequently turned my griddle down to 275F, which wound up getting me to the desired cooking temp of 325F.

Keto Caramel Sauce - Only .1g Net Carbs per Tablespoon
I've been experimenting a lot with various keto sweeteners and have found that when it comes to caramel, allulose seems to be the way to go. Besides behaving a lot like sucrose in recipes, according to the International Food Information Council, allulose is not metabolized by the body and thus causes no increase in blood glucose or insulin. As a result, it does not count toward net carbs.

Macadamia Almond Cashew Cacao Butter - Keto and 3g net carbs per 2 TB serving
When I did my video for coconut macadamia cashew butter, I got requests to do a similar nut butter, but without the coconut. In this video, I use cacao butter instead of coconut butter. Because it is thinner, I use less of it -- and I also found that I needed more nuts and sweetener to balance the fattiness of the cacao butter. The results are pretty darn good....

IMPORTANT NOTE: The monkfruit used in this video is Lakanto brand, which is an erythritol / monkfruit blend. Using 100% monkfruit would make these WAY too sweet. Additionally, if you use allulose as one of your sweeteners in this recipe, go lightly with it as it browns/caramelizes very quickly even at low temperatures.
This recipe (below) is so easy to make and will absolutely amaze your friends, family, and/or co-workers. When you tell people that these candied pecans are keto, their brains are going to explode. And if you're not keto, but still want to make this recipe, just use one cup of turbinado sugar (or Sugar in the Raw) instead of the non-sugar sweeteners used in this recipe.

In this video, I revisit one of my (and my family's) favorite recipes: candied pecans. I've also found that with the new combination of sweeteners I recommend, these pecans will have a crunchy candy shell after resting for just an hour or so.

🍖 Low Effort Smoked Beef Brisket Flat Using Keto Friendly Rub 🍖
Now, this isn't a smoking meat channel, but keto sure does partner well with grilling and smoking. If you watched my tallow rendering video, you had to have known that I'd be doing something with the brisket -- and here it is: a low effort smoked flat. As basic as this particular approach is, the flavor is still fantastic.
I don't have a printable recipe with macros for this one, as cooking time will vary based on the size of your brisket. Here is a summary of my recommendations, though:
- Before smoking, "notch" a corner of your brisket so that you can see which way the grain is running.
- Smoke your brisket at a temp between 225F and 250F until it reaches an internal temperature of 205F.
- Expect the cooking time to be between 1 hour and 1.25 hours per pound of brisket.
- Smoke with a strong flavored wood - hickory or mesquite are both good choices.
- I smoke with the fat cap facing up.
- Expect the cooking temp to stall somewhere between 150F and 180F. You can either wait it out, or wrap the brisket in foil to push it out of the plateau.
- I typically remove the brisket from the smoker at around 200F, wrap it in a towel (or foil, then a towel) and put it in a "cooler" for at least 30 minutes. You definitely want to let the brisket rest for this period and the "carry-over cooking" should bring the temp up to 205F.
- Slice the brisket perpendicular (or against) the grain of the meat for the most tender, fall apart slices.

Sweet & Tangy Keto Broccoli Bacon Cheddar Salad - Low Carb
This broccoli salad really hits all of my family's favorite taste buds -- it is sweet and tangy and savory and umami. It is like the best creamy coleslaw you've ever had, but with broccoli instead of cabbage. Oh, and the bacon, cheddar and red onion compliment each other so well. How to Make Blanched Almond Butter - Save Over 80% vs Store Bought
Blanched almond butter is a great substitution for coconut manna in recipes. It can be used in candy bars (melted with chocolate) as well as baking recipes, such as my pound cake recipe, or in sweet chaffles (including a short cake chaffle that's coming soon).
Unfortunately, blanched almond butter costs A LOT. I priced out a couple of brands on Amazon at between $2.00 and $2.50 per ounce -- that's $24 or more for a jar! By way of contrast, plain blanched almonds are anywhere from $.50 to $.70 per ounce. And if you want to save even more, you can blanch your own almonds for $.26 per ounce when buying a bag at Costco. Now that 12 oz jar is just over $3 instead of $24 or more.

Balsamic Dijon Marinated Kalamata Olives - Tangy and Slightly Sweet Keto Snack
I've often mentioned on this channel that when I have a snack attack, I'm not especially interested in sweets. Instead, I go for the core ingredients in a charcuterie tray: cheese, nuts, and olives.
In this video, I share with you a keto-fied version of marinated olives that my wife and I had on a charcuterie tray at the Spring City Wine Bar in Waukesha, WI. Big thanks to them for sharing the recipe with me.
I believe this marinade could also work well as either a marinade or sauce for chicken or pork, or it could be used as a vinaigrette on a salad.

🐖 Fall Off the Bone Tender Baby Back Ribs - Keto Barbeque 🐷
The 3-2-1 technique for smoking ribs is pretty well known in the barbeque community. It produces the most tender, succulent baby back ribs you can imagine. In this video, I utilize this smoking method along with my keto BBQ rub and sauce to create some crowd pleasing ribs.

Technique:
1) Preheat smoker to 225F (110C)
2) Check underside of baby back ribs for a membrane and if present, remove it.
3) Coat ribs with yellow mustard and apply BBQ rub (approximately 2TB / 30g to the top and 1TB / 15g to the underside of each rack)
4) Smoke ribs for 3 hours
5) Place ribs in aluminum foil with the steaming liquid of your choice (diet soda works well) and wrap tightly
6) Return ribs to smoker for 2 hours
7) Remove ribs from foil and brush with BBQ sauce
8) Return ribs to smoker for 1 more hour
9) Serve with additional BBQ sauce, if desired

You are not going to believe that this is only 4g net carbs per serving. If you serve it to someone who isn't keto, they will not believe it is low carb. It's just that good.
