Paleo butternut squash muffins
Ingredients for 12 muffins :
240 g baked butternut squash ( bake in advance for 30 minutes at 180 C)
50 g maple syrup
50 g dates syrup
120 g coconut oil
100 g plantain flour
100 g almond flour
60 g dark chocolate
16 g baking powder
1 egg
pinch of salt
1 tsp cinnamon powder
1/2 tsp cardamom powder
pinch of nutmeg
How to:
Pre heat the oven at 180 C.
In a bowl mix the plantain flour and the almond flour, add the baked butternut squash.
Mix well, add the egg and all the other ingredients, keep mixing.
When the muffins mix is ready, pour it in the muffins tray with the paper cups.
Bake for 30 minutes at 180 C.

Carrot Cake Ball 😉🥕🥥❤
Ingredients:
1 large carrot
12 dates stone free
100 grams of raw almonds
a pinch of vanilla paste
a pinch of cinnamon powder
coconut rapè to coat
➡️blend almonds
➡️blend dates (bones free)
➡️add cinnamon and vanilla
➡️mix all with carrots
🥶set for half an hour in the fridge
➡️make balls and coat them with coconut rapè

Paleo dates banana cookies no baking
Ingredients for 20 cookies:
1 ripe banana (around 110 g)
2/3 cup dates stone free (100 g)
1/2 cup coconut flour (40 g for mixing plus 20 g for dusting)
1/3 cup almond butter (100g)
1/2 lemon juice
20 vegan chocolate chips
1/4 tsp vanilla paste
Add the dates, lemon juice, banana, almond butter and vanilla in a food processor and blend.
Leave the mix in the freezer for 15 minutes to rest.
Then add 40 g of coconut flour and mix.
Shape the cookies adding the chocolate chips in the mile.
Dust in the remaining 20 g of coconut flour.
Store in the fridge.

Paleo spreadable dates and cocoa cream
Ingredients for 300 g of cream:
100 g dates stone removed
40 g organic cocoa powder
80 g unsweetened almond milk
90 g cashew nuts soaked overnight (or at least for 4 hours )
1/2 tsp vanilla paste
Ben all the ingredients in a food processor until smooth.
Store in the fridge and enjoy!

Ingredients for 20 cookies:

Plantain Paleo Crackers

You can use plantain dough to make several tasty recipes and avoid gluten 🤩🤩.
Today we made the plantain crackers🥳🥳🥳
We always bake them when is weekend and we have a lazy night with some drinks and sharing plates.
👇 check below the process to make dough from plantain fruit
👉5 plantains (two green and three yellow)
👉cook them in the oven for 40 mins 180 C. (Pierce them with a fork to check if they're ready)
👉cool them (until warm) and remove the skin
👉blend them with half cup of water in a food processor until you have a dough consistency (knead the dough while is warm!!! Otherwise it will crumble and loose elasticity)
👉transfer the dough in a bowl
👉add 2 tablespoons of extra virgin olive oil, a pinch of salt and pepper. Always mix!!
👉Flat it down using a rolling pin until 1 cm thick
👉drizzle with extra virgin olive oil , fresh rosemary and Maldon sea salt
👉put back in the oven for about 15 min 180 C
👉remove it from the oven, cut it in square and put it back for about half an hour 180 C.....and then it's ready!! 😍
It seems a long process but believe me, it is quite easy!
