Ingredients
1½ lbs boneless chicken thighs
salt and pepper
2 tbsp butter or coconut oil
1⁄3 cup (2¾ oz.) red pesto or green pesto
1¼ cups heavy whipping cream
3 oz. (2⁄3 cup) pitted olives
5 oz. (1 cup) feta cheese, diced
1 garlic clove, finely chopped
To serve
5 oz. (2½ cups) leafy greens
Instructions
1. Preheat the oven to 400°F (200°C).
2. Cut the chicken into bite-sized pieces. Season with salt and pepper.
3. Add butter or oil to a large skillet and fry the chicken pieces in batches over medium-high heat until golden brown.
4. Combine pesto and heavy cream in a bowl.
5. Place the fried chicken pieces in a baking dish together with olives, feta cheese and garlic. Add the pesto/cream mixture.
6. Bake in oven for 20-30 minutes, until the dish turns bubbly and light brown around the edges.

1 (4 oz.) yellow onion, sliced
1 tbsp coconut oil
2 garlic cloves, minced
2 tbsp curry powder
2 lbs ground beef or ground turkey
1½ tsp salt
¾ cup coconut cream
4 oz. (32⁄3 cups) baby spinach
Instructions
1. Peel and slice the onion into half-moons.
2. Heat a large frying pan or wok over medium-high heat, add coconut oil. When hot, add the onion and fry until it's soft.
3. Add the garlic and curry powder, stir and cook for another minute. Be careful not to burn the garlic.
4. Add the ground beef, season with salt, and continue to stir until thoroughly cooked.
5. Add the coconut cream and stir to combine.
6. While the curried beef is still simmering in the pan, begin to add the spinach one handful at a time. Stir the spinach
with the curried beef until it wilts. Repeat until all the spinach is added. Taste and add more salt if needed.
7. Serve the keto curry in bowls, and enjoy.

Instructions

4. Add the ham, spring onion, zucchini, and half the amount of shredded cheese. Add salt and pepper to taste.
5. Stir and pour into a greased baking dish. Cover with the remaining shredded cheese.
6. Bake for 20-30 minutes, or until the middle is set.
7. Set aside to cool for 10 minutes prior to serving.

5 oz. cherry tomatoes, halved

1. Whisk together the dressing ingredients in a bowl and refrigerate.

3. Heat a large frying pan on high heat. Add the ghee or butter, and once melted, add the meat and season generously with salt and ground
black pepper. When the meat starts to get some color, add the garlic and mix it around. Fry just until the meat is browned on all sides.

1. Preheat the grill for 20 minutes on medium heat with the lid down. If you don't have a grill, you can also prepare these delicious
burgers on the stovetop. Just fry the burgers in some butter in a frying pan for a few minutes on each side.
2. In a bowl, combine the ground beef, salt, and pepper.
3. Finely chop the onion and cut the jalapeño into small pieces. Remove the seeds first if you don’t want it to be too spicy. Add onion
and jalapeño to the meat and combine thoroughly with your hands.
4. Form one hamburger patties per portion. First, shape them into a ball and then slowly press down. If you make them on the grill,
leave them a bit thicker because they cook fast.
5.Grill the patties for 5-7 minutes on each side, depending on how well done you want them. Allow them to rest for 10 minutes before
serving so the juices can settle.
6. While the burgers are on the grill, thinly slice the tomato. Cut the avocado lengthwise, remove the pit and spoon out the flesh.
