Cold Brew Coffee Recipe in a Mason Jar
Add 12 tbsp. of Medium Roast Coffee to a 2 quart mason jar.
Fill with filtered water. Shake jar to wet all the grounds.
Let cold brew in refrigerator for 24 hours.
Remove from refrigerator and filter cold brew coffee.
Ready to Serve

Grilled Shrimp with Lemon Garlic Butter
This Grilled Shrimp with Lemon Garlic Butter is one of our favorite appetizer recipes. It's a crowd pleaser to take over to friends or family houses for an event.
For Spice Rub
1 tbsp Paprika
1 tbsp Garlic Powder
1 teaspoon Lemon Pepper
2 teaspoons Salt (Optional to taste. We skip this if using Salted Butter for the Lemon-Garlic Butter and add it if using Unsalted Butter)
1 lb Shrimp
For the Lemon Garlic Butter
1/2 Cup Salted Butter
Zest of 1 Lemon
Juice of 1 Lemon
4 Cloves Garlic, Minced
Pinch of Cayenne
Mix together Spice rub. Coat Shrimp with Spice Rub in bowl. Put Shrimp with Spice Rub on Skewers.
For Lemon Garlic Butter, melt butter. Add Lemon zest, Lemon Juice, Garlic, and Cayenne to melted butter. Split into two dishes. One for dipping and the other for brushing.
Grill Shrimp over Direct High Heat. Turning Once and baste with Lemon-Garlic Butter. Grill each side for 3 to 4 minutes per side.
Serve Shrimp Hot or cold with the reserved dipping sauce on the side.
Recipe Update: Changed Paprika from 2 tbsp to 1 tbsp. Changed Garlic Powder from 2 tbsp to 1 tbsp. Increased butter from 4 tbsp to 1/2 cup.

Garlic Scape Mashed Potatoes
It's that time of year when we get garlic scapes in the garden. Garlic scapes are a seasonal treat that you only get once a year.
One of my favorite ways to enjoy them is to add them to mashed potatoes.
Ingredient
6 - 8 Potatoes
2 tsp Salt
Bunch of Garlic Scapes Chopped
4 tbsp Unsalted Butter
1/2 Cup Milk
Cut Potatoes into rounds and place in Instapot. Cover potatoes with water and add 1 tsp of Salt. Set timer on instapot for 8 minutes then release steam naturally.
In a cast iron, melt butter and saute garlic scapes for about 3 minutes. Add and warm milk in cast iron.
Add Butter, milk, and garlic scape mixture to potatoes then add 1 tsp salt. Mix and mash potatoes to desired consistency.

Sourdough Pancake Recipe
Do you have a sourdough starter but not enough time to make sourdough bread? Well, here’s a sourdough pancake recipe that is just the right ticket to use up that extra sourdough.
Ingredients
2 cups or about 300 – 400 grams Active Sourdough Starter
1 Egg
4 tbsp Melted Butter
1 tsp Baking Soda
3 tbsp Water
In a mixing bowl, mix Sourdough Starter, Egg, and Butter.
Heat pan.
Combine Baking Soda and Water then add it to mixing bowl.
Spoon batter onto pan. Flip and cook on the opposite side.

Garlic Powder with a Mortar and Pestle
I grow so much garlic every year that I may never need to buy garlic again. After I braid the garlic and hang it in my basement for a year, the garlic cloves dry completely out.
I take the dried cloves and crush them into powder with a mortar and pestle.

Canning Black Bean and Corn Salsa
I canned this Black Bean Salsa two years ago and it was a great hit with my family so I decided to make it again.
It uses my Trail of Tears Black Beans and plum tomatoes from the garden. Next year, I plan on growing the onions, jalapenos, and cilantro too.
Ingredients
1 lb Dry Black Beans
8 cups corn
1/2 cup lime juice
1/3 cup olive oil
1/4 cup red wine vinegar
4 tsp salt
2 tsp black pepper
5 lbs tomatoes – cored, peeled, and chopped
9 jalapenos – chopped (optional)
2 red onion – chopped (you can use white)
1 cup cilantro – chopped
Soak beans overnight in cold water.
Drain and rinse the beans. Cover with fresh water and bring to a boil. Turn heat down and simmer from 30 minutes.
While the beans simmer, combine the rest of the ingredient and mix in a large bowl.
Drain the beans and add to the salsa mixture. Mix all ingredient.
To can, boil a pot of water. Fill clean jars 3/4 of the way with the salsa. Add boiling water to fill the jars leaving 1" of headspace.
Put the lids and bands on the filled jars. Use manufacture instructions to complete. I used 11 pounds of pressure for 1hr and 15 minutes.
Update: Changed Fill clean jars from 1/2 to 3/4

Rustic White Bean Soup with Grilled Tomatoes and Onions
This White Bean Soup is a favor of ours. The grilling of the tomatoes and onions give it the rustic mild grilled flavor.
Ingredients
1 Large Yellow Onion, cut into 1/2 inch slices
8 Plum Tomatoes
2 Tbsp Extra Virgin Olive Oil plus more for brushing
1 Clove Garlic
2 Cans (15 oz each) Cannellini Beans
pped Basil
Kosher Salt
Ground Black Pepper
2 Tsp Balsamic Vinegar
Brush Onion and Tomatoes with Olive Oil. Grill Onions for 10 - 12 minutes over direct high heat flipping halfway through the time until lightly charred on both sides. Grill tomatoes over direct high heat for 3 - 5 minutes turning occasionally until lightly charred on all sides.
Peel the skins of the tomatoes and roughly chop the tomatoes and onions. In a sauce pan over medium-high heat, warm 2 tablespoons of olive oil. Add garlic and onions and cook for 2 minutes, stirring occasionally.
Add Grilled Tomatoes, cannillini beans with liquid, and basil. Lightly season with salt and pepper. Bring to boil then simmer for 10 minutes, stirring occasionally. Season again with salt and pepper to taste. Add Balsamic Vinegar and finish with a final stir, and serve.
