This no-bake vegan coffee cheesecake is elegant, guilt free and easy to make with a healthy crust, smooth coffee filling, and carob ganache topping!
After the first bite I literally became obsessed with it and I’m sure you will too. 😋

Vegan coffee cheesecake recipe🍴:
▪️ Crust
Medjool dates
Almonds

▪️Cheesecake filling
Soy cream cheese (or any vegan cream cheese)
Beet sugar or erythritol
Hazelnut butter
Chicory coffee

▪️Ganache topping
Carob spread or chocolate ganache

▪️ Buttercream icing
Lin seeds butter (or any vegan butter)
Beet sugar or erythritol
Carob or cocoa powder
