INGREDIENTS:
1 egg
50 grams no calorie brown sugar
40 grams full-fat yogurt
15 grams applesauce
35 grams all-purpose or plain flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
30 grams grated carrot
5 grams raisins or walnuts optional
Cream cheese frosting:
60 grams Philadelphia lightest or 3% fat cream cheese
2 tablespoon no calorie icing sugar

INSTRUCTIONS:
1) Pre-heat oven to 180°C (356°F).
2) Make the frosting by creaming together the cream cheese and icing sugar. Set aside in the fridge whilst making the cake.
3) Using an electric hand whisk, beat the egg until fluffy. Whisk in the brown sugar until golden and fluffy
4) Whisk in the yogurt and applesauce then fold in the flour, baking powder,
ground cinnamon and ginger until well combined.
5) Fold in the grated carrots, raisins and walnuts if desired.
6) Transfer the batter to a 5-inch cake pan and bake for 20 minutes or until a toothpick inserted into the center comes out clean.
7) Allow the cake to cool before frosting. Enjoy!
