Ingredients:

1 liter full-fat milk
1/2 cup sugar (adjust to taste)
1/2 teaspoon cardamom powder
A pinch of saffron strands (optional)
Chopped nuts (almonds, pistachios) for garnish
Instructions:

Boil the Milk:

Pour the milk into a heavy-bottomed pan and bring it to a boil on medium heat.
Stir occasionally to prevent it from sticking to the bottom.
Simmer and Reduce:

Once the milk starts boiling, reduce the heat to low and let it simmer.
Stir occasionally and scrape the sides to prevent milk solids from sticking to the sides of the pan.
Add Sugar and Cardamom:

When the milk has reduced to about half its original volume (approximately 20-25 minutes of simmering), add sugar and cardamom powder.
Stir well and continue to simmer.
Saffron Infusion (Optional):

If you're using saffron, crush a few strands in a teaspoon of warm milk and add it to the rabid.
This will give it a beautiful color and flavor.
Continue Simmering:

Keep simmering and stirring occasionally until the milk thickens and attains a creamy consistency. This can take around 10 minutes more.
You'll notice the texture change, and it should be thicker than regular milk.
Cool and Garnish:

Turn off the heat and let the rabid cool to room temperature.
Once it has cooled down, refrigerate it until you're ready to serve.
