Dish #1: Quinoa Salad
Ingredients:
- 1 cup quinoa
- 2 cups chicken broth or water
- 1 cucumber, peeled and diced
- 1 red bell pepper, diced
- 1/2 cup chopped parsley
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa thoroughly under cold water.
2. In a saucepan, bring the chicken broth or water to a boil, then add the quinoa. Stir well and simmer for 15-20 minutes until fully cooked.
3. Once the quinoa is cooked, strain it and set it aside to cool.
4. In a separate bowl, mix the cooled quinoa with the diced cucumber, red bell pepper, parsley, lemon juice, olive oil, salt, and pepper.
5. Serve the salad in a dish and garnish with more parsley if desired.
