PREPARATION:
One popular Filipino dish that features squid and coconut milk is "Adobong Pusit sa Gata" or Squid Adobo in Coconut Milk. Here's a simple recipe for you to try:

Ingredients:
1 kg squid, cleaned and sliced into rings
1 can (400ml) coconut milk
1 large onion, chopped
4 cloves garlic, minced
1 thumb-sized ginger, sliced into strips
2-3 pieces red chili peppers (siling labuyo), sliced (adjust to your preferred spice level)
1/4 cup soy sauce
1/4 cup vinegar
Salt and pepper to taste
Cooking oil

Instructions:
Clean and Prepare the Squid:
Clean the squid thoroughly by removing the innards, cartilage, and ink sac.
Cut the squid into rings.

Sauté Aromatics:
In a large pan or wok, heat some cooking oil over medium heat.
Sauté garlic, onion, and ginger until fragrant.

Add Squid:
Add the cleaned and sliced squid to the pan.
Cook the squid until they turn opaque, which usually takes about 2-3 minutes.

Pour Soy Sauce and Vinegar:
Pour soy sauce and vinegar into the pan.
Stir and let it simmer for another 2-3 minutes. This helps tenderize the squid.

Add Coconut Milk:
Pour in the coconut milk into the pan.
Allow it to simmer over low to medium heat. Be careful not to bring it to a rapid boil to prevent curdling.

Add Chili Peppers:
Add the sliced red chili peppers to the mixture. Adjust the amount depending on your desired level of spiciness.

Season and Simmer:
Season with salt and pepper to taste.
Simmer for about 10-15 minutes or until the squid is tender and the flavors meld together.

Serve:
Once the squid is cooked to your liking, serve the dish hot.
It's commonly enjoyed with steamed rice.
