Jordanian Tamarind & Mint Cooler Recipe
This refreshing cooler is the perfect way to beat the heat! Packed with sweet and tangy tamarind flavor, invigorating mint, and a touch of lime, it's a taste of Jordan in every sip.
Ingredients:
• 1 cup ripe tamarind pods
• 4 cups water
• 1/2 cup fresh mint leaves
• Juice of 2 limes
• Sugar to taste
• Ice cubes
• Mint sprigs for garnish (optional)
Instructions:
1. Prep the Tamarind: Crack open the tamarind pods and remove the pulp. Discard the shells. In a medium saucepan, combine the tamarind pulp with 4 cups of water. Bring to a boil, then reduce heat and simmer for 10 minutes.
2. Muddle the Mint and Lime: While the tamarind simmers, in a separate bowl, muddle the mint leaves using the back of a spoon or a muddler. Squeeze in the juice of both limes.
3. Strain the Tamarind: Strain the tamarind mixture into a pitcher, discarding any seeds or pulp.
4. Sweeten and Chill: Add the muddled mint and lime mixture to the tamarind juice in the pitcher. Stir in sugar to taste, starting with a ¼ cup and adding more until you reach your desired level of sweetness. Remember, you can always add more later. Taste and adjust as needed. Let the mixture cool completely.
5. Serve and Enjoy: Fill glasses with ice. Pour the chilled tamarind cooler over the ice. Garnish with a mint sprig for an extra touch of Jordanian flair (optional).
Tips:
• For a stronger tamarind flavor, use more tamarind pulp or simmer for a longer time.
