Recipe in English: Ingredients: -Chicken (Boiled & shredded) 1 Cup -Matar (Peas) boiled ¼ Cup -Aloo (Potato) boiled & cubes ¼ Cup -Hara dhania (Coriander) chopped 2 tbs -Lal mirch (Red chili) crushed ½ tsp -Kali mirch (Black paper) crushed 1 tsp -Namak (Salt) ½ tsp or as required -Mozzarella cheese (grated) ½ Cup or as required -Olper’s cream ½ Cup -Bread slices (fresh) -Pani (Water) as required -Oil for frying Directions: -In bowl,add chicken,peas,potato,coriander,red chili,black pepper,salt,mozzarella cheese and Olper’s cream,mix well. -With the help of cutter,cut bread slices into round shape. -Wet your hands with water,take bread slices and put filling in the center and place second slice on top. -Made kachori with two bread slices,apply water,press and seal edges.Press gently with wet hands (makes 10-12). -In a wok,heat oil and fry until golden brown. -Creamy bread kachori is ready,serve hot. Recipe in English: Ingredients: -Olper’s Full Cream Milk 1 Litre -Desi ghee (Clarified butter) 2 tbs -Chuwaray (Dry dates) boiled & sliced 8-10 -Kaju (Cashew nuts) sliced 2 tbs -Badam (Almonds) sliced 2 tbs -Pista (Pistachios) sliced 2 tbs -Kishmish (Raisins) washed 1 tbs -Sugar ½ Cup or to taste -Elaichi ke daane (Cardamom pods) powder ½ tsp -Desi ghee (Clarified butter) 2 tbs -Sawaiyan (Vermicelli) crushed 40g -Kewra water ½ tsp -Dried rose petals Directions: -In a wok,add milk,bring it to boil & cook for 2-3 minutes until milk thickens. -In frying pan,add clarified butter & let it melt. -Add dry dates and mix well. -Add cashew nuts,almonds,pistachios,raisins,mix well and fry for 2 minutes. -Add fried nuts (reserve for later use),sugar,cardamom pods,mix well and cook on medium flame for 4-5 minutes & keep mixing in between. -In frying pan,add clarified butter & let it melt. -Add vermicelli and fry for 2 minutes. -Add fried vermicelli,mix well and cook for 6-8 minutes. -Add kewra water,mix well & cook untuil desired consistency. -Garnish with fried nuts,dried rose petals & serve! Vanilla Ice Cream Recipe in English: Ingredients: -Doodh (Milk) 400 ml -Cream 400 ml -Vanilla essence ½ tsp -Anday ki zarde (Egg yolks) 4 -Bareek cheeni (Caster sugar) ½ Cup Directions: -In pot,add milk,cream and vanilla essence,bring it to boil while mixing continuously (4-5 minutes). -Remove from heat and whisk until it comes to room temperature. -In bowl,add egg yolks,caster sugar and beat until it changes color. -Now gradually add milk mixture in egg mixture,whisk until well combined and strain it. -Put it back on stove,whisk until custard thickens and let it cool. -Pour the mixture in air tight container and freeze it for 4 hours. -Take out from freezer,beat for 2 minutes,cover and freeze for 4 hours. -Again take out from freezer,beat again and put it in freezer for at least 4 hours before serving.
