I can't pass up a good homemade protein bar! You never really know what's in the ones you buy and they can get kind of expensive, amiright?! So here's another homemade protein bar you can stick in your freezer for those times when you need a quick snack or something right before a workout or to tide you over until your next meal.
At only 120 calories per bar, this one is a WINNER! It's also vegan, no bake, and low in sugar. YAY!

HOMEMADE PROTEIN BAR RECIPE

INGREDIENTS:
95g Vegan Protein Powder (Chocolate Flavor): https://amzn.to/3UejTUf
45g oat flour
25g peanut flour: PB2 https://amzn.to/3BQ0BO9
25g date syrup
25g tahini
150ml oat milk
10ml melted cacao butter: https://amzn.to/3xjUlvh
For the peanut caramel:
80ml oat milk
60g peanut flour
50ml date syrup
10ml melted cacao butter
DIRECTIONS:
1. Combine 95g of Vegan protein powder, 25g peanut flour, and 25g oat flour in a bowl.
2. Then, add 25ml of date syrup, 25g tahini, and 150ml of plant-based milk.
3. Add 12 ml of melted cocoa butter and 20 more grams of oat flour. Mix until everything is well combined. The mixture shouldn’t be too sticky, and it shouldn’t get all over your fingers.
4. Once everything is combined, transfer to a small container.
5. For the Peanut Caramel, add 80ml of plant milk to a glass, and then add 60g of peanut flour, 10 ml of melted cocoa butter, and 50ml of date syrup. Mix everything until you have a thick caramel-like sauce.
6. Add it on top of the protein bars and put it in the freezer for 3-4 hours.
7. After that, cut in 12 bars. Each of them will have about 10 grams of protein and 120 calories.

LEAFY GREEN NORI ROLLS RECIPE

INGREDIENTS:
4 sheets of nori https://amzn.to/3RHkgVh
6 cups loosely packed leafy greens (such as romaine, butter lettuce, arugula, and spinach, etc.)
1 medium-sized tomato, cut into 4-inch strips
1/2 medium-sized cucumber, cut into 4-inch strips
8 spears asparagus (or 4 very large spears), ends trimmed
2 scallions, cut into 4-inch strips or 1/4 sweet onion, thinly sliced (optional)
1/4 cup sprouts
4 strips of Atlantic dulse or 2 to 3 teaspoons Atlantic dulse flakes (optional)
1/4 cup fresh orange or lemon juice
DIRECTIONS:
Place a nori sheet shiny side down on a chopping board with the long edge close to you. Arrange the leafy greens, prepared vegetables, sprouts, and dulse (if using) on one end of the sheet. Brush orange or lemon juice across the other end of the sheet, and then roll up tightly. Cut in half and serve immediately.
If you aren't doing the 369 Cleanse, you can use cauliflower rice, millet, brown rice, white rice, any starch you want to fill in for the leafy greens and have a more sushi-like experience. Heck, ADD FISH if you want to.. or chicken, or avocado is even great here. The sky is the limit!
Feel free to dip them in your favorite soy sauce or coconut aminos, and don't forget some wasabi and pickled ginger. You can get really creative with this... like blending together mangos, lime juice, and some red pepper flake!

SPINACH SOUP RECIPE

INGREDIENTS:
1 pint grape tomatoes
1 stalk celery
1 garlic clove
1 orange
4 cups baby spinach
2 basil leaves or a few sprigs of cilantro
1⁄2 avocado (optional)
DIRECTIONS:
1. Blend the tomatoes, celery, and garlic with the juice of 1 orange until smooth. Add the spinach by the handful until completely incorporated. Add the basil and the avocado (if desired), and blend. Serve and enjoy immediately!
Is this soup eaten hot or cold?
This is raw soup intended to be served at room temperature. It should not be heated.

INGREDIENTS:
3 Cups Peeled and cubed sweet potatoes
2 tbsp Chia seeds
One 15-oz can lentils or blackbeans
1 cup packed thinly sliced scallions
2/3 cup chopped fresh cilantro
1 1/2cups grated carrots
2/3 cup red bell pepper, diced small
1/4 cup freshly squeezed lime juice
1 tsp lime zest
1 tsp smoked paprika
1 tsp ground cumin
1 tsp dried oregano
1/2 to 1 tsp salt
1 tsp chipotle powder
1/2 tsp freshly ground black pepper
1/4 tsp cayenne pepper (optional)
1 1/4 cups cooked brown rice
1 1/4 cups cooked quinoa
6 tbsp gluten-free bread crumbs
olive oil for greasing the parchment paper and brushing the tops of the patties (optional)
1 cup cooked onion (optional)
2 garlic cloves (optional)
DIRECTIONS:
1. Place the sweet potatoes in a microwave-safe bowl with a splash of water and cover with a tight-fitting lid. Cook on high in the microwave for 4 minutes or until soft. Alternatively, steam until soft and set aside.
2. Whisk together the chia seeds and 5 tablespoons of boiling water in a small bowl and set aside.
3. Drain and rinse the canned lentils, reserving ⅓ cup. (If you are not restricting FODMAPs, you can substitute canned black beans for lentils.)
4. Place the scallions, cilantro, carrots, bell pepper, lime juice, lime zest, paprika, cumin, oregano, salt, chipotle powder, black pepper, cayenne, cooked sweet potato, and lentils into the base of a food processor and pulse until just combined, scraping down the sides as needed. Taste, adding more seasoning/salt/lime juice as preferred.
5. Transfer the mixture to a large bowl and add in the brown rice, quinoa, reserved lentils, bread crumbs, and chia mixture. Mix until well combined, adding in more salt/pepper/seasonings as desired.
6. Preheat the oven to 400°F.
7. Line a baking sheet with parchment paper and brush with olive oil. Scoop ⅓ cup of the mixture and form into a patty with your hands. Place on the tray to flatten slightly, then repeat until the remaining mixture is used. You will likely need two baking sheets, depending on their size. Brush the tops of the finished patties with olive oil and bake for 25 to 30 minutes, until lightly browned, flipping halfway through.
8. These patties will last in the fridge for 4 days, or in the freezer for 4 months. When freezing, place on a lined baking sheet in a single layer until frozen, then transfer to an airtight container. To reheat, microwave for 1 minute or panfry for 2 to 3 minutes per side until warmed through and crispy.
FF UNLEASHED:
If you are not following a low FODMAP approach, you can substitute black beans instead of lentils and 1 cup cooked onions instead of scallions. Add 2 minced garlic cloves, and use chili powder instead of chipotle powder.

Ingredients:
4 to 5 medium-sized tomatoes (any color), very thinly sliced
1 medium-sized cucumber, very thinly sliced
1/2 red onion, very thinly sliced
1 garlic clove, finely grated
1 cup chopped asparagus
1 cup loosely packed fresh basil, finely chopped
1 cup loosely packed fresh parsley, finely chopped
1/2 cup loosely packed fresh dill, finely chopped
1 tablespoon lemon juice
3 tablespoons orange juice
1 teaspoon Atlantic dulse flakes (https://amzn.to/3K0CwXj), more to taste (optional)
FOR THE SALAD BASE
6 cups loosely packed leafy greens (such as romaine, butter lettuce, spinach, and/or mâche)
2 tablespoons freshly squeezed orange or lemon juice
Directions:
Place the tomatoes, cucumber, onion, garlic, asparagus, and herbs in a medium-sized bowl. Toss until evenly mixed. Add the lemon juice, orange juice, and dulse flakes. Toss again and set aside. Place the leafy greens of your choice in a large bowl and top with freshly squeezed orange or lemon juice. Top with the cucumber and tomato mixture. Serve immediately or keep in the fridge until needed.

1. Rinse and clean your celery. Chop it into 1-inch pieces.
2. Add celery to the blender and blend on high until completely mashed.
3. Put your nut milk bag into a bowl or pitcher and pour the celery pulp and juice into the bag. Squeeze the juice out of the bag into the bowl/pitcher and toss the pulp into the garden or garbage.
4. Pour juice through a strainer into your glass and enjoy!

HOMEMADE STRAWBERRY JAM RECIPE

INGREDIENTS:
5 lbs of fresh ripe strawberries
6 cups of sugar
1/4 cup bottled lemon juice:

DIRECTIONS:
1. Prepare the canning jars for canning by washing them and putting them into the canning pot and cover with water and bring to a boil and allow to simmer while you cook the jam.
2. Remove the stems and leaves and hull the strawberries and either cut into smaller pieces or smash them.
3. Put strawberries and sugar and lemon juice into a large stock pot and bring to a boil.
4. Bring the mixture to 220F and cook for 10 minutes. Put a dollop on a plate and place in the freezer for 1 minute. Run your finger through the mixture and if it doesn't run back together, it's ready to put into the jars.
5. Remove the canning jars from the simmering pot and place on a damp towel on your counter.
6. Pack into the canning jars using your funnel and leave 1/4" headspace at the top. Put on the lids and screw hand-tight (snug but not too tight), and put into the simmering canning pot of water. Make sure they are covered by 1" of water.
7. Simmer for 10 minutes and remove from the pot and back onto the damp towel. Leave them alone for 24 hours and you should hear them ping while they seal up.
8. Revisit your jars the next day and check each one to make sure it has sealed completely. Then tighten the lids and add them to your pantry and enjoy at your leisure!

CINNAMON DONUTS by Medical Medium

INGREDIENTS:
• 1 cup gluten-free oat flour
• 1/2 cup almond flour
• 1/2 tsp aluminum-free baking powder
• 1/2 tsp baking soda
• 1/4 tsp sea salt
• 1 tsp cinnamon
• 1/3 cup coconut sugar
• 1 tsp alcohol-free vanilla extract
• 1 tsp lemon juice
• 1 tbsp maple syrup
• 1/2 cup unsweetened almond milk
DIRECTIONS:
1. Preheat oven to 350F.
2. Add the oat flour, almond flour, baking powder, baking soda, sea salt, cinnamon and coconut sugar to a medium-sized mixing bowl and whisk until uniform.
3. In a small jug, mix together the vanilla, lemon juice, maple syrup and unsweetened almond milk.
4. Pour on top on the dry ingredients and stir with a spatula until mixed. The batter should be very thick but pourable - add a bit more oat flour if needed. If the mixture if too thick then add a bit more almond milk.
5. Place the batter in a piping bag or zip-lock bag with the corner cut off. Pipe into a non-stick donut pan and bake for 12-14 minutes. Cool completely in the pan before serving.
