Vichyssoise was invented in America by the French Chef Louis Diat in 1917 to celebrate the opening of the Ritz-Carlton Hotel in New York. He made it simply with leeks, onion, potatoes, cream, and rich chicken stock, and he named it after the city of Vichy, France, where he grew up. Watch how easy it is to make!

Asian Turkey Lettuce Cups Recipe

Serves 4
Per Serving: 326 Calories - 26g Proteion - 31g Carbs - 11g Fat
30 minutes total time to make
INGREDIENTS:
3 tbsp reduced-sodium soy sauce
2 tsp sugar (optional)
2 tsp sesame oil
1 tsp Thai chili sauce (optional)
1 pound lean ground turkey
1 celery rib, chopped
1 tbsp minced fresh ginger root
1 garlic clove, minced
1 can (8 ounces) water chestnuts, drained
1 medium carrot, shredded
2 cups cooked rice (white or brown)
8 Bibb or Boston lettuce or cabbage leaves
DIRECTIONS:
1. In a small bowl, whisk soy sauce, sugar, sesame oil, and if desired, chili sauce until blended.
2. In a large skillet, cook turkey and celery 6-9 minutes or until turkey is no longer pink, breaking up turkey into crumbles; drain.
3. Add ginger and garlic to turkey, cook 2 minutes.
4. Stir in soy sauce mixture, water chestnuts, and carrot, cook 2 minutes longer.
5. Stir in rice, heat through.
6 Serve in lettuce leaves or over shredded lettuce.

COFFEE OREO ICE CREAM RECIPE

Per 1/2 cup serving
203 Calories - 14.7g Fat - 15.4g Carbs - 2.4g Protein
INGREDIENTS:
2 cups heavy cream, divided
1 cup milk
2/3 cups sugar
Pinch kosher salt
4 tsp instant coffee
6 large egg yolks
10 Oreo cookies, crushed
2 tablespoons Golden Rum
DIRECTIONS:
1. Heat 1 cup of the cream, milk, sugar, and a pinch of salt in a medium saucepan on medium heat until steaming but not boiling. Stir in the instant coffee until it is dissolved.
2. Pour the remaining 1 cup of cream into a medium sized bowl. Set it in an ice water bath in a larger bowl. Set a mesh sieve on top of the bowls. Set aside.
3. In a separate bowl, whisk the egg yolks together. Slowly pour the heated cream mixture into the egg yolks, whisking constantly so that the egg yolks are tempered by the warm milk but not scrambled by it. Pour the warmed egg yolks back into the sauce pan.
4. Stir the mixture constantly over medium heat with a heatproof, flat-bottomed spatula, scraping the bottom as you stir until the mixture thickens and coats the spatula so that you can run your finger across the coating and the coating not run. Be patient. This step can take 5 to 10 minutes.
5. Pour the custard through the sieve and stir it into the chilled cream. Chill the mixture thoroughly in the refrigerator (several hours or overnight), or just set the bowl with the custard in a new ice bath.
6. When thoroughly chilled and ready to put into your ice cream maker, add the rum and the Oreo cookies. Process the mixture in your ice cream maker according to the ice cream maker directions.
7. Transfer the mixture to a plastic storage container and freeze until firm, at least 6 hours. Consume the ice cream within the first few days if you want a creamy texture (especially if you left out the rum). It may form ice crystals within a few days because it has no stabilizers. Mine has been fine for a couple weeks because I included the rum!

I've been obsessed over the cinnamon sugary goodness of snickerdoodle cookies trying to perfect them, and wanted a yummy way to eat my oats more macro-friendly and bulked up with some high volume food like zucchini... so I found this recipe and couldn't wait to share it with you! Enjoy!

Snickerdoodle Zucchini Baked Oats Recipe

Servings 8
Per Serving: 120 Calories, 11g Protein, 15g Carbs, 2g Fat
INGREDIENTS:
2 Zucchini riced or grated (520g)
1 cup liquid egg whites (240g)
1 1/3 cup oats (120g)
1/4 cup almond milk creamer (60g)
2 scoops snickerdoodle or similar protein powder (66g)
1-2 Tbsp liquid vanilla stevia (15-30g) or your favorite sweetener to taste
2 tsp vanilla extract
2 tsp baking powder
1 tsp cinnamon
INSTRUCTIONS:
1. Pre-heat the oven to 350 degrees F.
2. Wash and dry your zucchini and grate them finely or you can use a food processor to "rice" them if you don't like the strands. Here's the slicer I used: https://amzn.to/439zOaH
3. In a large bowl, combine your riced zucchini (no need to drain) with the remaining ingredients. Mix well and pour into a greased and lined 9x13 pan. Bake for 30-40 minutes or until set.
4. Let them cool before cutting into 8 pieces. Eat it chilled from the fridge or warmed up topped with Greek yogurt, fruit, and nuts or topped with whipped cream or drizzle on some nut butter. Perfect for a healthy breakfast, snack, or dessert.

Crust Recipe
175g All-purpose Flour
7g (1.5 tsp) Granulated sugar
3g (1/2 tsp) Fine Sea Salt
113g (1 stick) Unsalted butter, cold
115g Ripe sourdough starter discard, 100% hydration
37g (3 Tbsp) Cold water
1. In a large bowl, whisk together the flour, sugar, and salt. Cut the butter into small cubes. Add the butter and lightly toss to coat with flour. Using a pastry blender or your fingers, cut the butter into the flour until the butter is the size of small peas. Add the sourdough starter and water. Stir with a spatula until well combined. The dough should come together, but if it’s still very dry, add more water, 1 tablespoon at a time, as needed.
2. Scrape the dough onto a clean work surface and gather and gently knead it into a disc shape. Tightly wrap the disc in plastic wrap and refrigerate for two hours (or overnight) before rolling out.
