Chicken:
1 tsp kosher salt
1/2 tsp cracked black pepper
1/2 cup all-purpose flour (plain flour)
1/2 tsp basil
1/2 tsp oregano
2 large boneless skinless chicken breasts, halved horizontally to make 4 fillets
2 tablespoons olive oil
1 tablespoon butter
Picatta Sauce:
2 tablespoons olive oil, divided
4 tablespoons unsalted butter or more as needed
2 tablespoons capers drained and dried on paper towel
4-5 cloves garlic, minced
1/2 shallot, minced
1/2 cup dry white wine "Sauvignon Blanc, Pinot Grigio or Chardonnay"
1/2 cup low-sodium chicken broth (or stock)
1 lemon zested and juiced
1/2 cup heavy cream
2 tablespoons fresh chopped parsley
INSTRUCTIONS
1. Place 2 large boneless skinless chicken breasts on a cutting board and halve them horizontally to make 4 fillets. Cover fillets with plastic wrap (or in a ziplock bag) using a meat mallet or rolling pin, pound and flatten to an even 1/4-inch thickness.
2. Mix the flour, oregano and basil in a shallow bowl. Dredge the chicken in the flour mixture and shake off excess.
2. Heat 2 tablespoon oil and 1 tablespoon butter in a 12-inch pan or over medium-high heat until shimmering. Fry the chicken breasts until golden-brown on both sides (about 3 to 4 minutes per side). Transfer to warm plate, tent with foil and keep warm.
3. In the same pan with remaining pan grease leftover from the chicken, heat 1 tablespoon of olive oil over medium heat until shimmering. Add the capers that have been dried out on paper towel and fry them stirring constantly for 1 minute or until slightly crispy. Remove capers and reserve for later. Heat 1 more tablespoon of olive oil over medium heat and add the garlic and shallots cooking until fragrant, about 1 minute.
5. Continuing with medium heat, pour in the white wine and reduce until thickened. Then add the chicken stock and lemon juice simmer and reduce until thickened.
6. Pour in the cream, bring to a quick boil and then turn off the heat. Stir in the 4 tablespoons of butter and at this point taste the sauce and adjust seasoning by adding more butter if the sauce is too lemony and salt if necessary. Return the chicken back into the sauce and spoon the sauce over the chicken. Finish with chopped parsley, reserved lemon zest and fried capers.
7. Serve over angel hair pasta or zucchini noodles tossed in the extra piccata sauce. Lemon herb rice is also a great accompaniment or possibly mashed potatoes, mashed cauliflower or risotto with lemon and parmesan. Some other delicious sides that compliment well would be lemon and garlic sautéed spinach, grilled or pan seared broccolini, roasted vegetables and shaved fennel or arugula salad with a light apple cider or red wine vinaigrette.

Beef Bourguignon - Classic French Stew
Simplified, easier version of Julia Child's Beef Bourguignon (Beef Burgundy) but with the same delicious results! Having had the pleasure of meeting and cooking for Julia I hope she would be pleased with my interpretation.
INGREDIENTS:
3 pounds beef chuck - fat trimmed and cut into 2" cubes
1/2 pound thick cut bacon - cut into 1 inch pieces
1 tablespoon kosher salt
1 teaspoon black pepper
1/2 cup flour
1 large yellow onion - chopped
5 medium or 3 large carrots - cut into 2 inch chunks
6 cloves garlic - minced
6-8 sprigs thyme - tied together
1 bottle burgundy or other dry red wine preferably pinot noir
2 bay leaves
5 cups low sodium beef stock
2 tablespoons tomato paste
salt and pepper - to taste
FINISHING VEGETABLES:
2 tablespoons butter
2 tablespoons olive oil
8 ounces pearl onions
1/2 cup beef stock
1 pound white or cremini mushrooms - larger cut in half, smaller left whole
1 teaspoon fresh thyme minced
2 tablespoons parsley minced
salt and pepper - to taste
INSTRUCTIONS:
1. Preheat oven to 325 degrees and set the rack in the lower middle position to allow enough room for a large Dutch oven
2. Use paper towel to pat the beef cubes as dry as possible, then season with salt and pepper. Toss the beef cubes with the flour shaking off the excess and place on a cutting board or sheet pan, discard the remaining flour.
3. Heat a large Dutch oven on medium heat and add the bacon. Cook the bacon until crispy and the fat has rendered then remove the bacon to a paper towel lined plate or bowl.
4. Continuing with medium heat, sear the beef in the bacon fat until browned on all sides working in batches so you don't crowd the pan. Remove the beef to a plate and set aside.
5. Add the carrots and onions and sauté until the onions are soft and the carrots are beginning to cook. Stir in the garlic and cook for another minute before adding the tomato paste. Continue to sauté the tomato paste for 1-2 minutes and then deglaze the pan with the beef stock and wine scraping the bottom of the pot to remove any carmelized bits of food. Add the bundle of thyme, bay leaves, seared beef and bacon. Bring everything back to a simmer, cover and bake at 325 degrees for approximately 2 1/2- 3 hours, checking at the 2 hour mark as the cooking time will vary depending how large you cut the beef pieces. When it's done the beef should be fork tender and beginning to fall apart but not mushy.
6. While the beef is cooking we'll prepare the pearl onions and mushrooms. Add 1 tablespoon of olive oil and 1 tablespoon of butter to a sauté pan on medium heat and sauté the pearl onions turning frequently until brown on all sides. Add the 1/2 cup of beef stock cover the pan and simmer for approximately 20 minutes or until the stock has evaporated. Remove the onions from the pan set aside and add another tablespoon of olive oil and 1 tablespoon of butter. Sauté the mushrooms stirring frequently until browned and cooked throughly, season with salt and pepper to taste and add the 1 teaspoon of thyme.
7. Add the pearl onions, mushrooms and parsley to the stew and stir to incorporate, season to taste with salt and pepper. Serve on a bed of mashed potatoes and Enjoy!

10 MINUTE Super Easy Honey Garlic Chicken
INGREDIENTS
2 boneless and skinless chicken breast fillets
Salt and pepper, to season
1/4 cup all purpose flour
2 tablespoons olive oil
2 tablespoons butter
6 medium or 3 large cloves of garlic, minced
1/3 cup honey
1/4 cup chicken broth
2 tablespoons apple cider vinegar or rice wine vinegar
1 tablespoon soy sauce
Sesame seeds and chopped parsley for garnish
INSTRUCTIONS
1. Butterfly chicken into 4 fillets and then season with salt and pepper. Place the flour in a bowl and coat the chicken fillets with the flour shaking off the excess.
2. Heat a pan over medium high heat and add 2 tablespoons olive oil and 1 tablespoon butter. Sauté the chicken breast fillets a couple minutes on both sides until golden.
3. Pull the chicken out of the pan to a plate and add 1 tablespoon butter to the pan. After it melts and begins to bubble, add the garlic and sauté for 1 minute. Add the soy sauce, vinegar, chicken stock and honey to the pan and stir or swirl the pan to mix the ingredients. Put the chicken back into the pan and bring the sauce to a simmer. Reduce the sauce for approximately 3-5 minutes until thickened.
4. Flip the chicken in the sauce and garnish with sesame seeds and parsley. Serve over rice, pasta or vegetables and cover with more sauce. Pair with a nice salad and Enjoy!
I did mine on a bed of lemon thyme quinoa with roasted asparagus. This sauce also goes well with pork, lamb, beef and seafood. I haven't tried it on ice cream, but I bet that's delicious too!

I can't stop making this beef with bacon! Easy and so delicious!
INGREDIENTS:
1200 g rump steak (2.65 pounds)
Salt
black pepper
1 tbsp lard
100 g bacon (3.5 ounces)
2 onions
70 g mild mustard (2.5 ounces)
1 liter beef broth (about 4.2 cups)

1 tsp allspice
1 teaspoon black pepper, whole
1 tbsp lard
1 tbsp flour
Dumplings:
20 g fresh yeast (0.7 ounces)
250 ml lukewarm milk (1 cup)
500 g all-purpose flour (4 cups)
1 tsp sugar
pinch of salt
2 tsp vegetable oil
1 egg
Bake at 200°C (approx. 392°F) for 1 hour and 30 minutes in a convection oven
